Confetti Bean Salad

Three-bean and tomato salad brings fiber and antioxidants to the table for a hearty, filling meal.

  • 1 (15 ounce) can garbanzo beans, rinsed and drained
  • 1 (15 ounce) can dark red kidney beans, rinsed and drained
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes with roasted garlic
  • 1 (9 ounce) can whole kernel corn, drained
  • 1 (8 ounce) can mushroom pieces, drained
  • 1/2 cup Caesar Italian salad dressing
  • 2 teaspoons Italian seasoning
  • 1/4 teaspoon pepper

Mix all ingredients. Serve hot, at room temperature, or chilled.
